Bacon Topped Meatloaf

 Today is a comfort food kind of day. Actually most days are comfort food days!

There are many many meatloaf recipes out there and over the years I’ve tried many of them! This recipe always works, we all need meals you can rely on.

Serve with creamy mashed potatoes and your favorite vegetables for a complete meal.

Bacon Topped Meatloaf

Ingredients
Meatloaf
  • 1 1/2 lbs ground beef
  • 1/4 cup milk
  • 2 slices bread
  • 1/4 cup Parmesan cheese
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon season salt
  • 1 egg beaten
  • 1/2 teaspoon parsley flakes
  • 6 slices bacon
Tomato Sauce
  • 1/2 cup ketchup
  • 3 tablespoons light brown sugar
  • 1/2 teaspoon dry mustard
  • 3 dashes hot sauce
  • 2 dashes Worcestershire sauce
Instructions
Meatloaf
  1. Preheat oven to 350 degrees

  2. In a large bowl pour milk over bread and let soak for several minutes

  3. Add the Parmesan cheese, season salt, pepper and parsley to the bread mixture


  4. Add the ground beef and beaten egg

  5. Combine ingredients with hands and form into loaf

  6. Place bacon slices over the top of the loaf

Tomato Sauce
  1. In a small bowl mix ingredients together

  2. Pour half of the tomato sauce over the loaf

  3. Bake for 45 minutes

  4. Pour remaining half of tomato sauce over loaf and continue baking for additional 20 minutes

  5. Let rest for 15 minutes before slicing
