Pink Lemonade Cupcakes

It’s summer and pink lemonade cupcakes are the perfect dessert. I used a boxed cake mix for this, who wants to spend a lot of time in the kitchen when the temperature goes up? Not me, a hot kitchen is not fun in the summer.

These pink lemonade cupcakes are refreshing and light enough for dessert after grilling.  I made buttercream frosting and added a dash of pink food color. My buttercream frosting recipe can be found on one of my earlier posts. I made 2  batches of frosting, one with only food color added and the other with 3 tablespoons of pink lemonade concentrate added. If you are looking for more of the lemonade taste add the concentrate to the frosting. Either way it turns out great!

Ingredients


1 box Better Crocker SuperMoist vanilla cake mix

3/4 cup frozen (thawed) pink lemonade concentrate

1/2 cup vegetable oil

1/4 cup water

3 eggs

Pink food color – optional

Directions

Line muffin tin with paper baking cups (18)

Prepare the cake batter as directed on the box, mixing the cake mix, 3/4 cup lemonade concentrate, 1/2  cup oil, the water, eggs and food color

Fill the baking cups 2/3 full

Heat oven to 350 degrees

Bake 18 minutes or until toothpick inserted in center comes out clean
