Parmesan and Herb Roasted Grape Tomatoes

Parmesan and Herb Roasted Grape Tomatoes

Roasting grape tomatoes is a great way to bring out their sweetness. Grape tomatoes pack a punch of nutrients into your diet. Lycopene, vitamin C and fiber are some of the benefits you’ll receive snacking on grape tomatoes. Eating these are not only good for your dishes but also your health. Grape tomatoes have a small oval shape with an extra sweet flavor.

You can find grape tomatoes in the produce department year round. Cherry tomatoes can also be used in this recipe but can be harder to find when not in season. You can enjoy these roasted grape tomatoes straight out of the oven or you can get creative.  I’ve used them in bruschetta and skewered with mozzarella, no matter how you serve them up they will be a delicious addition to your meal preparations. Roasted grape tomatoes can be used as a side dish and will complement a brunch or dinner entrée.
