Babka (Potato Casserole) Lithuanian Recipe

This Babka recipe was given to me by extended family.  When I searched for more information I discovered babka to be more of a bread. This recipe is either Polish or Lithuanian. Prepared with grated potatoes, onions and eggs, it resembles a type of potato casserole. While looking for information, I came across recipes for Lithuanian kugelis. My recipe closely resembles kugelis.

Babka is a European style potato dish that makes a great side dish or main entrée. It is well-formed and can be cut into serving squares. Add this dish to your recipe collection!

Ingredients

  • 7 potatoes
  • 1 large Onion, diced small
  • 1 cup flour
  • 3 eggs, beaten
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter
  • 1 tablespoon oil

    Directions

    1. Spray a 9×13 casserole dish with cooking spray
    2. Peel potatoes and soak in cold water until ready to grate
    3. Saute onions in butter and oil, brown lightly
    4. Grate potatoes
    5. Mix all ingredients together
    6. Pour mixture in casserole dish
    7. Bake at 400 degrees for 1 hour
