Angel Hair Pasta with Spinach

I love this meal, it is quick and easy to prepare. This can be a  main entrée or side dish.

Feel free to substitute the angel hair pasta with your favorite kind of pasta. I’m just partial to angel hair, it creates a lighter meal. I’ve been told perception is reality.That works for me 🙂

During Lent,  I always struggle to create meals without meat. I find myself staring into my pantry or opening and closing the freezer. When I draw a complete blank that’s when I decide maybe we should just have cereal. This recipe saves me on those days I swear no meal can be prepared without meat.

Pasta and spinach, two of my favorites come together in a heaping bundle of joy. Enjoy!

Angel Hair Pasta With Spinach
Servings: 4

Ingredients
  • 8 ounces angel hair pasta
  • 3 tablespoons butter
  • 2 cloves garlic minced
  • 5 ounces baby spinach pre-packaged
  • 1/2 cup grated parmesan cheese
  • salt and pepper to taste
Instructions
  1. Cook pasta according to package


  2. Drain pasta- Reserving 1/2 cup of pasta water

  3. Set pasta aside

  4. In the pot used to cook noodles

    Melt butter

  5. Add garlic and cook over low heat for 4 minutes

  6. Add the pasta back to the pot

  7. Add the spinach and cook over low heat until spinach wilts

  8. Mix ingredients together adding pasta water slowly back in until desired moistness is acquired

  9. Stir in the Parmesan cheese and gently toss everything together

  10. Pour pasta into a serving bowl

    Top with a sprinkle of Parmesan cheese if desired
